Fried Kuey Teow

I used to have a stall selling fried kuey teow and porridge many many years back.
My kuey teow failed to impress Chinese customer because according to one uncle, there was one ingredient lacking, I guess the ingredient is the one thing muslim cannot eat!
But I don't think mine is that bad, if no one likes it, I do hehehe!

Fried Kuey Teow

Ingredients
I. kuey teow
  Cooking oil

II-Pound
garlic
red chillies
pounded dried chillies
dried shrimps



III-Mix sauce
 mix salty and sweet soya sauce together with thick soya sauce and oyster sauce.
Add a bit of salt, sugar and chicken stock cube or fresh stock if any.

IV-Condiments:
bean sprout or tauge
cockles (blanch- 1 minute only)
prawns, fishball, chicken meat (optional)
Egg.

1.Heat a table spoon of oil. Fry egg like making scramble egg.. Do not overcook. Put aside.
2. Use the same oil to fry kuey teow for a minute. Put aside.
3. Take one garlic and mince. Fry on heat oil/
4. Add pounded ingredients. Let it cook for awhile.
5. Add in fried kuey teow.
6. Put in the sauce. Fry and make sure kuey teow all covered with sauce.
7. Add in condiment. If you like the taste of bean sprout make sure you put it last.
8. Serve.

Note: To me the keys to make this dish delicious are:
Freshness of the ingredients
the cockles should not be overcooked.
same goes with the bean sprout that's why it should be added last.
sauce - taste to your preference.
